Pomme Dauphinois (Fancy Potatoes)

Ingredients
  

Roasted Garlic

  • 1 cup garlic whole, peeled
  • 2 cups olive oil

Pomme Dauphinois (Fancy Potatoes)

  • 2 cups sweet onions chopped
  • 6 medium potatoes peeled and sliced
  • 1 1/2 cup heavy cream
  • 1 cup milk
  • 2 tbsp thyme fresh
  • 2 tbsp chives fresh
  • 2 tbsp parsley
  • 4 oz butter unsalted
  • salt & pepper to taste
  • non-stick spray

Instructions
 

  • To make roasted garlic add olive oil and whole garlic to a sauce pot and cook on medium heat for roughly 30-40 minutes or until soft and golden brown. Strain oil and puree the garlic. Reserve oil for other recipes.
  • In a mixing bowl add all ingredients including the pureed garlic and make sure it is seasoned very well with salt and pepper. DO NOT add the non-stick spray.
  • Use the non-stick spray on a half sheet pan and pour the potatoes mixture onto the pan and spread evenly. Bake on 350 degrees for 50-60 minutes uncovered. Serve hot.
