Country Style Catfish with Green Beans and Sweet Onions

Fish
  • lb catfish fillet fresh
  • 1 tbsp olive oil
  • 2/3 cup corn flake crumbs
  • non-stick spray
Green Beans
  • 1 pkg green beans frozen, french cut
  • 1/2 medium sweet onion chopped
  • 1 tbsp olive oil

Method
 

Fish
  1. preheat oven to 500 degrees
  2. rinse fish and pat dry
  3. dip fish in olive oil
  4. bread fish with corn flake crumbs
  5. spray baking sheet with non-stick spray
  6. season fish with fresh ground pepper
  7. bake for 10 minutes
Green Beans
  1. Chop sweet onion
  2. heat oil in skillet
  3. heat oil in skillet
  4. heat through and plate
  5. top with fresh sweet onions
